I'm going to smoke some salmon this week. (oh yeah, find some ziggy papers that big). I think I can regulate the smoker to 175 deg so worth a try. I used to be pretty good at smoking those big bluefish that used to come into the bay, but they are scarce now. We cussed them then, but I bet they would be welcome back now. The big ones were about 16#, fought like hell and weren't picky about what they eat. You would sometimes have to fight them again when you got home. They were really good. Have to salt/cure them and then smoke them cold for about 5 hours, so I'm going to give it shot. 5# of salmon keeps me in bagels a long time. That is all.

It's a small fan motor controlled by a temperature sensing thermocouple that clips onto the grill in the grill chamber. It works on wood or charcoal fires by regulating the amount of air gets to the fuel. You set the pit temp, and adjust the other dampers accordingly, and it cycles on and off as needed to maintain the set temperature. It's like a mini cpap and it works very well. The one I got has ramping features and auto shutoffs, but like your phone it does a lot more than you need.

So would you use it with something like a propane grill? My BIL would be interested in something like this I bet, and his birthday is coming up. Where would one look for such an item?

This needs to control air (oxygen) while the fuel source is constant. To control a gas grill, you would need to control fuel( the gas) to regulate. It would work on a weber grill, or anything like that that burns wood fuel. I have been thinking though, I have a couple of those gas fireplace valves that might work with propane. If I can find a way to use the sensor to control the output, maybe. I'd have to find a way to read the temp sensor in degreees to make a setpoint. Hold my beer. That software has to be on the market. Let me look.
