I splurged and bought some ground beef from the dude at the Fredericksburg farmer's market. He assured me it came from a cow who lived a happy life and frolicked in the fields until their death day.
I took it home and froze it. Yesterday I took it out in anticipation of creating cheeseburger wraps. I carefully put my friendly chunk of cow into the refrigerator to defrost. This afternoon, I checked it and that puppy is still frozen solid! Not even a hint of thawing.
Now it's sitting out of snout's reach on a shelf in the pantry. I shall have to eat vegetarian chili for dinner, which is not a terrible thing, it's just that I wanted cheeseburger wraps!

Wish I could afford to get the local stuff. The meat at the stores, there's just no telling what nationality it is and it's also now illegal for them to tell you. Not suspicious. At. All.

Yeah, I splurged, but this is going to be a rare thing, because it was about triple the price at the grocers. OTOH, I did (and have) been reminding myself that this is how meat should probably be - raised properly on a real farm and expensive, so it's not an everyday thing.
It's all thawed and back in the fridge waiting for tonight's dinner. And the chili was good, but I added a wee bit too much salt by accident - not a disaster, just something to remember for next time. That and more chipolte.

I want to be on record as saying that cow must have lived an amazing life, because it was delicious! Not a lot of fat, cooked up very nicely. Added some peppers and onions, a little salt, some pizza sauce and cheese and BOOM! Cheeseburger pizza wraps!
Made enough for dinner tonight with some leftover that I froze for another day.
