I have a recipe for minestrone soup that's totes easy
3 c Vegetable Broth 1 (14.5oz) can kidney beans (drained and rinsed) 1 c frozen green beans 2 chopped carrots 1 small zuccini chopped 1 c chopped onion 2 cloves garlic minced 1 tablespoon italian seasoning 1/4 tsp salt 1/4 tsp pepper 8 oz uncooked elbow macaroni
Combine everything except the pasta in a 3qt slow cooker Cover and cook for 7 hrs Increase heat to high and stir in pasta Cover and cook for 15 minutes or until pasta is done
Recipe says 4 servings, but we usually get around 6, and sometimes more depending on how much pasta we add.
We also ditched the 7 hours cook time - as long as you don't add the pasta, it can cook on low for quite a while, or we've done it in 3 hrs when we've been short on time too

Thanks. I'm not big on minestrone though. Even potato soup has meat (bacon) in it!
Here's mine, as promised. Full disclosure, I didn't get it from a recipe and didn't measure anything. Just threw some stuff in the Crock-Pot and whallah.
2 whole boneless skinless chicken breasteses, two cans of low sodium cream of chicken soup, 1 soupcan full of water, and a pack of Lipton onion soup mix. Cooked on medium for about 5 hours. Coarsely pulled the chicken with a fork. Put in what was probably equal to 2 cups of uncooked rice, stirred it all up, covered, and let it go another 90 minutes.
Done. Awesome. Only thing to do different next time is measure the rice. The final product was not as creamy as I was shooting for, so a little less rice would have achieved that. a cup and a half sounds right.
No other seasoning was needed.

That sounds good.
I also did seasoned chicken - 4lbs chicken 2c chicken broth. 1 tablespoon garlic flakes (you can always use more!) 1/2 tablespoon seasoned salt
Cook for around 6 hrs and shred
We added some taco seasoning to make fajitas - ate some that night and froze the rest for later.

Yes, yes, excellent.
The next one is going to be either pot roast of beef stew. Depends on whether I remember to get some Guinness for the stew. No recipe for that it's basically the meet, the beer, and whatever veg you like. I'm working on ways to season our food to minimize salt or leave it out altogether. A little more difficult with pot roast and all those big taters.

I've been adding a little less salt than the recipe calls for, then doing a taste at the end - if it needs more, I add a little more. Plus a little garlic goes a loooooong way IMO!

The Mrs. Dash seasonings are really great and NO SALT.
My blood pressure was under control and now it's not. They have increased the meds but the effect has been only a slight improvement. So I'm putty myself on a low sodium diet and calorie counting again. Hopefully that does the trick. I don't mind stroking out but the problem is stroking halfway.
