Does the grown ass man that fired the shots not understand that every time he pulled that trigger. it meant that whatever the guy did/was doing, gave him less justification and increased the reasons shit is on fire as we speak?

No, because his training says that he needs to neutralize the threat in front of him, and keep pulling the trigger.
Plus, I imagine that adrenaline and some sort of panic response takes over the minute you first pull the trigger so you're not in complete control of your response.
Because shooting at an inanimate target in a range is a completely different thing than pulling the trigger on a living thing. And when you're taught that people will act like you never hit them and keep charging towards you, you tend to panic and let instinct take over.
Twill never happen with the current administration, but rather than sending police departments more military equipment, they need to be sent fully-functional body cameras. Ones that need to be worn at all times, and turned on any time an officer has an interaction with any member of the public. No excuses.
That should be something the 'Good Cops' should be more than willing to get behind -- we WANT you to see what we do on a regular basis, cause we're not bad folks and unlike our bad brethren, we know how to behave.

Yup. Remember years back in MoCo, cop shotgunned a 15yo girl. She and her friends had been joyriding and were pulled over by two cops. Cop 2 had failed his range test, so wasn't allowed to carry a handgun, so he was holding a shotgun.
Cop 1 told them all to stand still. Girl was holding a bag of Doritos. Being 15 and stupid, she did what a lot of stupid 15yos do, and deliberately ate a chip. Cop 2 heard the bag rustle, and the training took over. He was already pointing his shotgun at all of them, and had his finger on the trigger, so he instinctively pulled. Cause she was a threat - she moved and made a noise.
Police aren't trained to stop for even half a second and think in these situations - just react. Hear a noise - shoot Person moves - shoot Feel threatened - shoot
Cause if you don't kill them, they're sure as hell going to kill you.
And once they're dead, you can write the narrative. You didn't shoot an innocent dude in the back in front of his kids. He was a criminal with a record! He was going for a gun! He was a large angry man! (the black part is implied here - you never see white dudes being described as large and angry, do you?) I was in danger!
And of course the obvious is never asked - why didn't you shoot out the tires on the car first? And did you actually know the dude had a record before you shot him in the back and kept shooting? Were you at all concerned about accidentally hitting the small children in the back of the car?
Nope, all we need to know is that he was a big black man, and was yelling (therefore extremely dangerous). Threat neutralized, so go about your business.

The pooch is so fuckin screwed now. 17 y/o white boy walking down the street with an AR15, the armored vehicles literally drive right past him. Nothing. He shoots and kills at least one rioter and likely one protester that was trying to disarm him after the first shooting. Stories vary greatly. Not now nor ever do I defend the cops but I do try to make judgements on a case by case basis, like I did in the OP. But they make it really difficult to view the things being asserted, like the institutional racism thing, in the way that Nikki Haley et al have recently raised on a national platform. I get the feeling this law and order meme is less about law and order and more about police state authoritarianism (tyranny). If only there was a large group of armed citizens that promised they would not sit idly by while that was happening. Or if they do respond, it's on the side of tyranny. Duh.
